We know Christmas Day isn’t here just yet, but it’s not stopping us thinking about all that lovely food! With a fridge full of turkey, heaps of cranberry sauce and copious amounts of Christmas cake, Christmas dinner is the gift that keeps on giving. Plan what to do with your inevitable Christmas leftovers in advance this year, with some of our favourite festive recipes.
A classic turkey curry
Ingredients
- 2 onions, chopped
- 2 garlic cloves, chopped
- 1 small piece of root ginger, chopped
- 2-3 tablespoons curry powder
- 500g turkey (shredded)
- 400g tin of chopped tomatoes
- 200g of passata
Method
- Fry the onions, garlic, ginger and curry powder in olive oil for 5 minutes on a low heat (keep stirring to stop the onions browning)
- Add the chopped tomatoes and passata and mix well
- Stir in the shredded turkey and allow to simmer for 30 minutes, stirring occasionally
- Serve immediately with basmati rice and enjoy!
Camembert and cranberry toasties
Ingredients
- Camembert cheese, sliced (amount depending on your liking)
- Thick cut slices of white bread
- Cranberry sauce
- Butter
Method
- Butter the bread
- Add the camembert to one slice of bread
- Top with a spoonful of cranberry sauce
- Close the sandwich with another slice of bread
- Fry in a hot non-stick pan for 1 minute, pushing down with a fish slice until golden brown
- Cut in half and eat right away
Christmas pudding apple crumble
Ingredients
- 60g butter
- 100g plain flour
- 200g leftover Christmas pudding
- 3 large cooking apples, peeled and sliced
- 2 teaspoons of demerara sugar
- Custard or cream to serve
Method
- Preheat oven to gas mark 4 or 180 degrees
- Rub the butter and flour in to a breadcrumb and then crumble in Christmas pudding to create the topping
- Add the fruit in to a large oven proof dish and cover with demerara sugar
- Spoon the topping to cover the fruit and sprinkle with sugar
- Bake for 40 minutes until the topping is golden brown
- Serve with custard or cream
