This effortlessly and delicious salad is sure to become a summer favourite! It’s so easy and a perfect lunch if you’re away camping or just in a rush at home. Simply drain a tin of chickpeas and add to a serving bowl, stir in 4 table spoons of pesto, the juice and zest of a lemon, then add 100gm of your favourite olives and 250g of sliced fresh tomatoes and serve.
