It’s almost that time of year when we have a whole day dedicated to our lovely mothers, celebrating how wonderful they are and how lucky we are to have them.
What better way to show your love for your mum than creating her a perfect lunch?
You may like to prepare a starter for your mum to set your meal off, but where to start? A retro prawn cocktail is always an easy, quick and popular option. All you need is a nice fresh salad base, a tasty seafood sauce and finally, most importantly add the prawns – or whatever seafood takes your fancy. Alternatively, a caesar salad is always a great option. It’s quick and simple, with delicious ingredients including croutons, crisp lettuce, shavings of parmesan cheese and the all-important caesar dressing.
Perhaps pate and a nice bread selection is more up your street, with a selection of pickles and chutneys. For colder weekends a small soup works well; they’re quick and simple to make but also let you be creative with the ingredients, so you can tailor it to your mum’s favourite things. Just remember to not get carried away with portions – you want your mum to have lots of room left for your delicious main!
Traditionally, the perfect Mother’s Day lunch would be a good old Sunday roast with all the trimmings – roast potatoes, roast carrots and parsnips, maybe even the odd brussel sprout too! Of course, not forgetting the main asset to any roast – the joint of meat. Does your mum prefer chicken to beef? Or lamb to pork?
Whichever she prefers, there is going to be a lot of pressure on you to live up to the cooking standards of your mum. After all, everyone loves their mum’s cooking, so make sure you don’t leave everything to the last minute, plan in advance what you need – ingredients, what pots and pans you require and, the most important aspect – timings!
Maybe your mother would prefer a picnic in the countryside amongst the spring flowers and the sunshine? You could gather all of her favourite picnic essentials – a selection of cheeses and crackers, chutneys, jams, crusty bread, a fancy salad, fruit, crisps, a cupcake or two and possibly a nice bottle of wine or some locally sourced fruit juice or elderflower cordial. Don’t forget fold up chairs and/or a picnic blanket, and have a backup plan in case the great British weather turns against you.
Of course, where would any Mother’s Day lunch be without a cheeky dessert? This could be anything sweet, ranging from her favourite ice cream, maybe a homemade cake, chocolate mousse, lemon tart, apple crumble, or cheesecake, to name but a few.
