Chocolate orange pancakes
Ingredients
- 125g self-raising flour
- 45g caster sugar
- 35g cocoa powder
- 250ml semi-skimmed milk
- 1 tbsp vegetable oil
- 1 large egg
- 1/2 tsp orange extract
- 1 orange zest
Method
- Mix the flour, cocoa powder, sugar and orange zest and stir together in a bowl.
- Then whisk together the milk, vegetable oil, orange extract and egg together in a separate bowl.
- Next pour the milk mixture slowly into the flour mixture – then stir.
- Warm a frying pan on a medium heat and add a spoonful of oil. After this, use a ladle to spoon blobs of the pancake mixture into the pan. As they start to bubble, flip them over. Cook on either side for another minute. They are then ready to eat – yum!
Sweet potato pancakes
Ingredients
- 1 medium sweet potato
- 1 cup of milk
- ½ tsp cinnamon
- ½ tsp vanilla extract
- 1 large egg
- 1 cup of wholewheat flour
- 2 tsp baking powder
- ¼ tsp salt
- 1 chopped banana
- 4 tbsp maple syrup
- 1 cup of low-fat vanilla yoghurt
Method
- Roast the sweet potatoes for 40 minutes then puree the sweet potato with a blender or food processor, the smoother the batter, the smoother the pancakes.
- Next, add 1 cup of milk, ½ tsp of cinnamon, ½ tsp vanilla and 1 large egg and blend until smooth. Then sift the salt, baking powder and flour, then add the sweet potato mixture and stir until the mixture is combined. Add more milk if needed.
- To fry the pancakes, start by adding 1-2 tbsp of the pancake batter to a medium pan. Turn the heat to medium and cook each side of the pancake for 2-3 mins each.
- Serve with a chopped banana, some yogurt and a couple of tablespoons of maple syrup – delicious!
Salted caramel chocolate pancakes
Ingredients for pancakes
- ½ cup of oat flour
- 1 tbsp ground flax seeds or chia seeds
- 1 ½ tbsp cocoa powder
- 2 tbsp almond flour
- ¼ tsp baking soda
- ¼ tsp sea salt
- ½ tsp baking powder
- 2 tbsp maple syrup
- 1/2 cup almond milk
- 2 tbsp mashed banana
- ½ tsp vanilla extract
Ingredients for caramel filling
- ¼ tsp salt
- ¼ tsp vanilla extract
- 3 tbsp maple syrup
- 1 tbsp melted cocoa butter
- ¼ cup almond butter
Method
- To create the salted caramel, line a baking sheet with parchment paper. Then combine all the filling ingredients in a bowl and whisk until smooth and well combined.
- Dollop 1 tbsp of the salted caramel onto the baking sheet and repeat this 6 times. Then place the baking sheet in the freezer for at least 1 hour.
- Mix together the oat flour, cocoa powder, flax seeds, almond flour, baking soda and sea salt. Then add the maple syrup, milk, banana and vanilla extract. Whisk the mixture until it is well combined, then let it sit for about 5 minutes.
- Then heat 1 tsp of coconut oil in a non-stick skillet on a medium heat. Place 1 tbsp of pancake batter into the skillet and press one of the caramel disc in the middle of the pancake, then cover with more batter. Repeat this for another pancake and cook for 2 minutes on each side before flipping. Serve with a chopped banana or melted chocolate!
