3 chocolate recipes that will go down a treat this International Chocolate Day

Friday is the day all chocoholics have been waiting for – it’s International Chocolate Day! A day to truly indulge in all the delicacies chocolate has to offer, without any judgement. Chocolate comes in many delicious forms; cakes, cookies, brownies, tarts, pies… and well, the list could go on. To celebrate this super sweet day, we have shared some simple cocoa-filled recipes to tantalise your taste buds. Enjoy!

 

Chocolate s’mores milkshake

Ingredients

  • 2 tablespoons of chocolate sauce
  • 250ml semi-skimmed milk
  • 2 scoops of chocolate ice cream
  • Handful of marshmallows
  • 30ml whipped double cream
  • Crushed digestive biscuits

Method

  • Coat the inside of the glass with a drizzle of chocolate sauce
  • Blend the milk with the chocolate ice cream until smooth and pour into your glass
  • Top with whipped cream, toasted marshmallows, crushed digestives and a drizzle of chocolate sauce for the perfect treat! Serve immediately.


Chocolate thumbprint cookies

Ingredients

  • 100g plain flour
  • 90g buckwheat flour
  • 60g golden caster sugar
  • 180g unsalted butter
  • 100g dark chocolate
  • 1 tsp coconut oil

Method

  • Mix the flours and sugar together in a bowl, and then add the butter so it starts to make a dough
  • Tip the dough out onto a flour-covered work surface and knead until smooth
  • Roll the dough into 25 small balls and transfer on to a baking tray
  • Create a thumbprint in the middle of each dough ball
  • Put in the fridge to chill for 30 minutes before baking for a further 15-20 minutes, until golden brown
  • Melt the chocolate and coconut oil in a bowl and use a teaspoon to fill the hole in each cookie
  • Allow the chocolate to set then dig in!

Chocolate and avocado mousse

Ingredients

  • 2 ripe avocados
  • 3-4 tablespoons of runny honey
  • 1 teaspoon of vanilla extract
  • 50g raw cacao powder

Method

  • Blend both avocados in a food processer and blend until smooth
  • Add the honey, vanilla and cacao powder and blend again until all is combined
  • Spoon the mousse into wine glasses and keep in the fridge before serving - then enjoy your tasty yet healthy treat.
